Yorkshire puddings

Ingredients
- 100 g (4 oz) flour
- 250 ml (1/2 pt) milk
- 1 egg (or 2+ eggs for some recipes)
- Oil (sunflower or olive are fine)
Method
- Briefly whisk flour and milk.
- Whisk in egg.
- Ideally leave in fridge for an hour.
- Heat up a muffin tray with oil in the oven to a very hot temperature 220 C or more.
- Divide mixture in tray and bake for 20 to 25 minutes until well risen.
Tip
Do not open the oven door while cooking or the heat will escape and the Yorkshire puddings will collapse.
Tip
More eggs will make the mixture rise further and be more crispy, assuming your oven is hot enough.
