Tzatziki

Ingredients
- 1/4 cucumber
- 150 ml creme fraiche or yoghurt
- 1/2 lemon
- Mint / parsley
Method
- Peel cucumber and scoop out seeds. Squeeze excess water from the remaining flesh and grate into a bowl.
- Juice the half lemon and add to the bowl.
- Stir in creme fraiche or equivalent yoghurt.
- Chop fresh herbs and stir into tzatziki.
