Stone baked pizza

Ingredients
- 1 tsp yeast
- 600 g (24 oz) bread flour
- 2 tbsp olive oil
- 280 ml (1/2 pt) water
- 1 block of cooking mozzarella
- 1 tin of tomatoes or 1 tube of tomato puree
- Oregano
- Toppings of choice (e.g. pepperoni or red pepper and mushroom)
Method
- Make dough and prove (e.g. in bread machine).
- Put pizza stone in oven and heat to 220 C.
- Split dough into four. Flour board and roll out pizza base.
- (optional - make passata by frying pressed garlic in a small amount of olive oil, then adding tomatoes or tomato puree with water and reducing). Spread this passata or just tomato puree onto base.
- Sprinkle chopped or dried oregano over base.
- Finely dice a quarter of the mozzarella and sprinkle over base.
- Add toppings of choice.
- Cook on pizza stone for 12-15 minutes depending on amount of toppings.
Info
Unfortunately a pizza stone is required for this recipe. Generally avoid acquiring too many kitchen gadgets as they clog up valuable space and can be an unnecessary expense, but if you like pizza this one is pretty much mandatory.
