Potatoes

Ingredients
- 1 medium potato per person
- Butter or spread, with optional milk (for mashed)
- Olive or sunflower oil (for frying, sauteing or roasting)
Method
Boiled potatoes
- Peel potato(es).
- Cut up potatoes; if using potatoes of different sizes, cut up the larger into eight pieces, the mediums into four, and smaller into two or three to even out the sizes of the pieces.
- Boil for 20 minutes or until soft, and remove water.
Mashed potatoes
- Make boiled potatoes, as above.
- Mash with a masher, adding the butter/spread and milk if desired. Chefs often use cream.
- Flavourings can be added at this point e.g. cheese, herbs etc.
Chips
- Peel potato(es).
- Cut potatoes into strips.
- Heat oil in saucepan - do not stint on the oil
- Add chips. Do not keep pushing around in the pan, or they will stick and the edges come off; instead, leave on each side for five minutes, turning once the crispy side is fully set.
- If double frying, fry once at a lower temperature, leave to cool and then fry again at a higher temperature.
Saute potatoes
- Par-boil potatoes as above but for 10 minutes.
- Fry as if chips once.
Roast potatoes
- Par-boil potatoes as above but for 10 minutes.
- If a disciple of Delia Smith, fry as if saute potatoes (not required).
- Bake in the oven on a baking tray in preheated oil at 180 C, for 45 minutes, turning half way through.
