Method

  1. Cut the butter into cubes.
  2. Add the butter and flour to a food processor and blitz to the "breadcrumbs" stage.
  3. Add a couple of tbsp of water and blitz further. If after 15 seconds or so the mixture starts to come together stop; if you still have the breadcrumbs, add water one tbsp at a time until it comes together.
  4. Remove from the food processor and push together to make one ball of pastry.
  5. Refrigerate for half an hour before rolling.

Half fat to flour.

This recipe has enough pastry to roll the bottom and top sections of a pie for a large pie dish.
