Pan fried chicken with mushrooms

Ingredients
- 2 chicken fillets
- 1 tbsp plain flour
- Olive oil
- 4-6 chestnut or button mushrooms
- Tarragon
- Black pepper
- Olive oil
- 1 splash of white wine or marsala wine (optional)
- 1 lemon
- 100 ml double cream or creme fraiche
- Potatoes
- 1 head of broccoli (or equivalent green vegetable)
Method
- Partly flatten the chicken fillets by cutting through the widest part of the fillet and opening out, then flattening by hand - it should not be very flat like a schnitzel.
- Coat the chicken fillets with the flour and fry in olive oil over a medium heat.
- Make roast potatoes or other carbohydrates of your choice e.g. mashed potatoes or Boiled rice.
- When the chicken is cooked, set aside and keep warm.
- Wash the mushrooms and remove the hard bottoms of their stalks, slice them and juice the lemon.
- Boil or steam the broccoli.
- Add the splash of wine (optional) and lemon juice to the pan and deglaze.
- Add the tarragon and mushrooms and cook for a couple of minutes.
- Stir in the double cream or creme fraiche, cooking for a few minutes more and season with freshly cracked black pepper.
Info
The time of 45 minutes above is a bit of an average; with rice or mashed potato you can make it in 30-35 minutes but roast potatoes will lengthen that to nearer an hour.
