Method

  1. Peel and chop sweet potatoes; mix with olive oil and paprika in a large baking dish and put in a pre-heated oven at 200 C for at least 45 minutes.
  2. Cut corn tortillas into triangles and brush with olive oil. Bake in batches for about 8 minutes each until golden; they will be crisp up as they cool.
  3. Make Guacamole.
  4. Make Tomato salsa.
  5. If making sour cream and chives, chop chives and add to sour cream in a bowl and serve.
  6. Heat large frying pan with no oil.
  7. Add one wheat tortilla to dry pan and add grated cheese to one side, and black beans if desired.
  8. When each tortilla starts to get blackened on the bottom and the cheese melts, remove from pan and cook the next until all are served.
  9. Remove sweet potatoes from oven and serve.
Tip

Lancashire cheese makes a good substitute for Mexican queso blanco.
