Ingredients
- 2 sweet potatoes
- Olive oil
- Paprika
- 1 packet of corn tortillas
- 1 packet of large wheat tortillas
- Medium cheddar or mix of cheeses
- Black beans
- (see Guacamole)
- (see Tomato salsa)
- Sour cream (optional)
- Fresh / frozen chives (optional)
Method
- Peel and chop sweet potatoes; mix with olive oil and paprika in a large baking dish and put in a pre-heated oven at 200 C for at least 45 minutes.
- Cut corn tortillas into triangles and brush with olive oil. Bake in batches for about 8 minutes each until golden; they will be crisp up as they cool.
- Make Guacamole.
- Make Tomato salsa.
- If making sour cream and chives, chop chives and add to sour cream in a bowl and serve.
- Heat large frying pan with no oil.
- Add one wheat tortilla to dry pan and add grated cheese to one side, and black beans if desired.
- When each tortilla starts to get blackened on the bottom and the cheese melts, remove from pan and cook the next until all are served.
- Remove sweet potatoes from oven and serve.
Tip
Lancashire cheese makes a good substitute for Mexican queso blanco.
