Macaroni cheese

Ingredients
- 35 g unsalted butter
- 35 g plain flour
- 350 ml milk
- 2 tsp mustard powder
- 100 g or more mature cheddar or a mix of cheddar and other sharp cheese
- 300 g (12 oz) macaroni
- Frozen peas (optional)
- 1-2 slices of ham (optional)
- Breadcrumbs
- Freshly cracked black pepper
- Fresh chives (optional)
Method
- Make White sauce with the above quantities, making sure to stir in the mustard powder.
- Meanwhile, boil some water and cook the macaroni to packet instructions - usually macaroni only needs about eight minutes to cook as it is a small pasta. With a few minutes to go, add frozen peas if required.
- Grate the cheese and stir in. Pepper well. Add ham is required.
- Drain the pasta and peas and combine with the sauce in a pie dish. Add breadcrumbs and more grated cheese to the top.
- Grill until the top has crisped up and serve immediately, dressed with chopped fresh chives if desired.
