Katsu curry sauce

Ingredients
- 1/2 onion
- 2 cloves of garlic (or 1/2 tsp garlic powder in the curry powder)
- 1 carrot
- Oil
- 300+ ml (1/2 pt+) chicken stock
- 1 1/2 tbsp curry powder
- ( 1 tsp turmeric,
- 1 tsp coriander,
- 1 tsp cumin,
- 1/4 tsp chilli powder,
- 1/2 tsp ginger,
- 1/2 tsp cracked black pepper)
- 1 tbsp flour
- 1 tsp honey
- 1 tbsp soy sauce
- 2 tsp peanut butter (optional: check your guests for allergy first!)
Method
- Saute the chopped onions, garlic and grated carrot until caramelised.
- Add flour and curry powder and stir.
- Gradually add the stock stirring to avoid lumps, then add the honey, soy sauce and peanut butter.
- Simmer gently for 20 mins and blitz.
