Grandad Eric's 'Curly wurlies'

Method

  1. Peel the onions and slice them as thinly as possible.
  2. Gradually cook the sliced onions in olive oil over a low heat for at least 20 minutes, until their volume is much reduced and they look very yellow.
  3. Add the sausage meat and cook out, constantly breaking up the sausage meat as it cooks into smaller and smaller pieces that cook faster.
  4. Deseed and chop the red pepper.
  5. At the same time, heat up a saucepan of water for the pasta.
  6. When the sausage meat is cooked through, add the tin of tomatoes and the entire tube of tomato paste and stir well.
  7. Add the fusilli to the boiling water and cook as per packet instructions, for about 13 minutes.
  8. With just a minute or two of cooking time remaining on the pasta, add the spices to the sauce and stir in well.
  9. Drain the pasta and mix into the sauce.
Tip

This is a very rare recipe where the spices are added at the end - the flavour profile is not right if the spices are added earlier in the cooking process.

This is the only recipe we have from granddad Eric, who could cook quite well but seldom bothered except for this dish, even though nana Susan was not good at cooking. I have added the red pepper to his version. Although pasta is generally Italian, we know the origins of this recipe are Spanish.
