Flatbread

Ingredients
- 200 g self raising flour
- 100 g plain yoghurt
- 1/2 tsp baking powder
- 1 tbsp olive oil
- 1-3 tbsp water
- Cumin seeds or nigella seeds (optional)
Method
- Combine the flour, yogurt, baking powder and olive oil in a mixing bowl and add enough water to form a dough.
- Knead dough for a few minutes and leave to prove for half an hour
- Cut into four and roll into oval strips.
- If using flavourings such as cumin seeds or nigella seeds, sprinkle over the top, then fold the dough and roll out again.
- Place into a hot frying pan without oil and cook for one or two minutes on each side.
Tip
This is for smaller flatbreads as a side dish of a meal. If needing bigger flatbreads to be a major part of the meal, particularly if it is the only carbohydrate, increase the flour and yoghurt in the same proportions by 50% or more.
Note
The timing of 45 minutes includes proving time, actual preparation and cooking time is only about 15 minutes combined.
