Cottage pie

Ingredients
- 1 onion
- 450 g (1 lb) minced beef
- 2 carrots
- 1 tin of chopped tomatoes
- Olive oil
- Rosemary
- Thyme
- 1 tsp paprika (optional)
- Balsamic vinegar (optional)
- 3 potatoes
- 3 large parsnips
Method
- Peel and chop the onion, and fry in the olive oil for a few minutes in a medium sized cast iron casserole, over a medium heat, until softened.
- Peel the potatoes and parsnips. Quarter the potatoes and chop the parsnips into similarly sized chunks. Boil together in a large saucepan until soft (about 20 minutes - test with a fork).
- Add the minced beef to the onions and brown.
- Peel and grate the carrots.
- Add herbs and optional paprika, and stir in, cooking off for another minute. Add a splash of balsamic vinegar (optional).
- Add the chopped tomatoes and grated carrots, stir in and simmer for at least 10 minutes.
- Make mashed potato and parsnip.
- Flatten the surface of the sauce and add the mash to the top, using a fork to flatten and pattern the top.
- Put under the grill for 5 minutes to crisp and start to brown the top.
- Serve with green vegetables e.g. peas or broccoli.
