Method

  1. Peel and chop the onion, and fry in the olive oil for a few minutes in a medium sized cast iron casserole, over a medium heat, until softened.
  2. Peel the potatoes and parsnips. Quarter the potatoes and chop the parsnips into similarly sized chunks. Boil together in a large saucepan until soft (about 20 minutes - test with a fork).
  3. Add the minced beef to the onions and brown.
  4. Peel and grate the carrots.
  5. Add herbs and optional paprika, and stir in, cooking off for another minute. Add a splash of balsamic vinegar (optional).
  6. Add the chopped tomatoes and grated carrots, stir in and simmer for at least 10 minutes.
  7. Make mashed potato and parsnip.
  8. Flatten the surface of the sauce and add the mash to the top, using a fork to flatten and pattern the top.
  9. Put under the grill for 5 minutes to crisp and start to brown the top.
  10. Serve with green vegetables e.g. peas or broccoli.
