Chris' chicken rice

Ingredients
- 1 chicken thigh
- 1/4 tin of chopped tomatoes or 100 ml chicken stock and tomato puree
- Juice of half a lemon
- Sunflower or olive oil
- 50 g sweetcorn
- Tarragon
- 50 g rice
Method
- Make Boiled rice.
- Skin and debone the chicken thigh and cut into 6 to 8 chunks.
- Seal the chicken chunks in oil in a small frying pan over a medium heat.
- Add tarragon and cook for another minute.
- Add the lemon juice and tomato sauce and cook the chicken in this as a braise over a medium-low heat.
- Add the sweetcorn 10 minutes before the rice will be ready.
