Method

  1. Make Boiled rice.
  2. Skin and debone the chicken thigh and cut into 6 to 8 chunks.
  3. Seal the chicken chunks in oil in a small frying pan over a medium heat.
  4. Add tarragon and cook for another minute.
  5. Add the lemon juice and tomato sauce and cook the chicken in this as a braise over a medium-low heat.
  6. Add the sweetcorn 10 minutes before the rice will be ready.
