Method

  1. Peel and chop the onion and fry in olive oil in a frying pan or casserole for about 5 minutes until softened.
  2. Make 250 ml beef stock.
  3. Add the beef mince and cook until completely browned.
  4. Add the garlic (optional), cumin and coriander, and stir in, cooking for a further minute.
  5. Add the tomatoes, tomato puree and beef stock and bring to a simmer, stirring to avoid sticking - start a simmer of 45 minutes with occasional stirring.
  6. Deseed and chop the red pepper and add.
  7. Make Boiled rice (American long grain is traditional).
  8. With 10 minutes left, add the drained beans.
