Chilli con carne

Ingredients
- 1 large onion
- 450 g (1 lb) beef mince
- Olive oil
- 1 clove of garlic (optional)
- 1 tsp cumin
- 1 tsp coriander
- 1 red pepper
- 1 tin of chopped tomatoes
- 1 tin of red kidney beans
- 1 tin of borlotti beans
- 1 beef stock cube
- 1 tbsp tomato puree (a squeeze of the tube, no need to measure)
- 200 g long grain rice (or make flatbread)
- Soured cream to serve (optional)
Method
- Peel and chop the onion and fry in olive oil in a frying pan or casserole for about 5 minutes until softened.
- Make 250 ml beef stock.
- Add the beef mince and cook until completely browned.
- Add the garlic (optional), cumin and coriander, and stir in, cooking for a further minute.
- Add the tomatoes, tomato puree and beef stock and bring to a simmer, stirring to avoid sticking - start a simmer of 45 minutes with occasional stirring.
- Deseed and chop the red pepper and add.
- Make Boiled rice (American long grain is traditional).
- With 10 minutes left, add the drained beans.
