Ingredients
- 50 g (2 oz) rice per person (one handful), or more if rice is the main ingredient
- 100 ml water per 50 g of rice
Method
- Wash rice three or four times in water until most of the starch has been removed and the water runs clear.
- Bring to the boil over a high heat.
- Turn heat down to a low heat and cover with the lid.
- After 20 minutes, remove from the heat and leave for 10 minutes.
Tip
Do not lift the pan lid until the cooking has finished. The lid keeps in the steam which is vital for the absorption to work properly.

This is the absorption method and is the best method for cooking jasmine or basmati rice.
