Beef stew

Ingredients
- 800 g (32 oz) beef shin (best, or stewing steak)
- 2 tbsp flour
- 2 onions
- 600 ml (1 pt) beef stock
- 1 bay leaf
- Rosemary and thyme
- 3-4 carrots
- 2-3 parsnips
- Olive oil
- (see Dumplings)
Method
- Trim the beef and cut into chunks. Coat in flour and seal the outside in a large casserole pot, in batches if necessary. Scrape the bottom with the wooden spoon regularly.
- Set aside beef and cook the onions, chopped, in oil until softened and slightly brown. Add beef and stock, cracked black pepper and rosemary and thyme. Bring to the boil and turn down, cover and simmer for two hours.
- Add the carrots and parsnips and simmer for another hour.
- Make Dumplings and add for the last half hour.
