Baked falafel

Ingredients
- 1 large onion
- Olive oil
- 4 cloves of garlic
- 2 400 g tins of chickpeas
- Bunch of fresh coriander
- 3 tsp cumin
- 2 tsp coriander
- 3 tbsp plain flour
- Black pepper
Method
- Very finely chop the onion and fry in olive oil over a low to medium heat for 10 minutes until softened.
- While the onion is softening, skin the garlic cloves and, with a couple of minutes remaining on the onions, grate into the frying pan a stir in.
- Set the frying pan aside to cool.
- Drain the tins of chickpeas and add to a food processor. Finely chop the coriander and add, then also add the spices, flour and plenty of freshly cracked black pepper. Add the now cooler onion/garlic mix.
- This mixture is too dry by itself to blitz in the food processor, so add some water (2 tbsp?) and olive oil (1+ tbsp?). Blitz for a couple of minutes.
- Distribute into small portions over a baking tray lined with baking parchment and bake in the oven at 230 C for 25 minutes.
- Make a salad and some Tzatziki to accompany your falafels and serve hot.
