Baked falafel

Method

  1. Very finely chop the onion and fry in olive oil over a low to medium heat for 10 minutes until softened.
  2. While the onion is softening, skin the garlic cloves and, with a couple of minutes remaining on the onions, grate into the frying pan a stir in.
  3. Set the frying pan aside to cool.
  4. Drain the tins of chickpeas and add to a food processor. Finely chop the coriander and add, then also add the spices, flour and plenty of freshly cracked black pepper. Add the now cooler onion/garlic mix.
  5. This mixture is too dry by itself to blitz in the food processor, so add some water (2 tbsp?) and olive oil (1+ tbsp?). Blitz for a couple of minutes.
  6. Distribute into small portions over a baking tray lined with baking parchment and bake in the oven at 230 C for 25 minutes.
  7. Make a salad and some Tzatziki to accompany your falafels and serve hot.
